Jessie and I have been on a margarita kick lately. It started with the mild spring and early summer. As summer winds down we found ourselves looking for a variation on our favorite margarita recipe, this is what I came up with…
Phil’s Pineapple Margarita
The pineapple flavor in this variation is a refreshing alternative to standard margaritas
Ingredients
Instructions
1. (If using a tub of fresh pineapple, skip to #3) If using a real pineapple,
2. 1. Peel and core pineapple; cut pineapple into rough 2-inch chunks,
3. Puree ½ of the pineapple chunks in work bowl of food processor fitted with steel blade until smooth and foamy, about 1 minute. Combine 1/2 cup pureed pineapple with lemon and lime juices and sugar.
4. Strain juice mixture into 1-quart pitcher or cocktail shaker. Add tequila, Triple Sec, and 1 cup of the crushed ice; stir or shake until thoroughly combined and chilled, 20 to 60 seconds.
5. Divide 1 cup crushed ice between 4 or 6 margarita or double old-fashioned glasses. Strain into ice-filled glasses; serve immediately, raise glasses,clink and say “CHEERS”!
Use the remaining pineapple chunks for the second round! Or double the recipe for larger groups. I learned that straining is key, I made the first round WITHOUT straining the pineapple mixture and found it to be too thick Enjoy, and as always... CHEERS! Tags
